Homemade Pumpkin Pie Puree

Thanksgiving is getting closer and we're working on getting some of the prep work ready! Today we picked up two small sugar pumpkins at the farmers market, hollowed them out and baked them.  Once they were baked I ran the meaty portion through the blender and packed them into two cup servings of puree'. Each serving will make one scrumptious pumpkin pie.

Abigail and I took the seeds and roasted them for snacks over the holiday. While we were baking, I told the girls about the Youth Advisory Council in high school scooping out pumpkins to roast seeds in the cafeteria on the last day of school before Thanksgiving break.
